Portobello Mushroom Sandwich

Serves 4


4 Large Portobello Mushrooms

Marinade Ingredients

5 tbsp tamari

2 ½ tbsp liquid smoke

2 tbsp maple syrup

1 tsp salt

1/2 tsp smoke paprika

1/2 tsp onion powder

1 tbsp nutritional yeast

Optional Toppings (pickles, 1 tomato slice thinly, romaine lettuce

Vegan Mayo


Measure out marinade ingredients. Mix marinade ingredients in a small bowl set aside until ready to use.

Remove the stem from each portobello mushroom. Option to slice the mushroom left to right making long 1/2 inch strips or leave Mushrooms as caps.

Place mushroom caps in a container then pour the marinade over each mushroom, making sure to coat evenly. Marinade overnight. If short on time marinate for at least 1 hour.

Once mushrooms finish marinating it’s time to cook them. Turn the stovetop to medium heat. Place a grill pan or cast iron pan on stovetop. Pour one to two teaspoons of oil in pan. Place marinated mushrooms in hot pan, cook for 4-5 minutes on each side or until desire texture.

Remove mushrooms from pan and serve on vegan friendly bread with your favorite toppings.
