Vegan Stuff Bell Peppers

Last week I decided to try my luck with stuffed bell peppers. This may be surprising to some but I have never ate stuffed bell peppers.

I love bell peppers. I seen several people share stuffed bell pepper recipes online but I never thought to make them. For my stuffed bell peppers I wanted to treat it like a taco. So I used ingredients that may be found in tacos.

Bell Pepper are rich in antioxidants and vitamins. They are an excellent source for Vitamin C and carotenoids. One bell pepper contains 169% of the daily recommended serving of Vitamin C. Bell peppers also contain iron, and the combination of both the vitamin c and iron helps with the absorption of iron. Iron is beneficial to the body because it helps eliminate iron deficiency illnesses like anemia. Bell Peppers are low in calories at 31 calories per 3.5 ounces. They are hydrating to the body, containing 92% water. Bell peppers are beneficial to the body, and finding more ways to incorporate them into your diet can be a benefit to your overall health.

Vegan Stuff Bell Peppers

Serve 4


4 Bell Peppers

1.5 C Cooked Black Beans Lightly Salted

1 Yellow Onion (diced finely)

2 C Cooked Quinoa Lightly Salted

1 Cup of Walnut Meat Recipe below

2 tsp Chili Powder

2 Tbsp. Tomato Paste

Remove tops from four bell peppers. Heat medium pan and add cooking spray. Place Dice in to small pieces and add to medium pan. Add onions and cook until soften.

Preheat Oven to 400 Degrees Fahrenheit

Add Tomato paste and chili powder mix together with onions and red peppers. Reduce heat and add cooked quinoa, beans, and one cup of walnut meat recipe, mix together. Check the taste. Sprinkle with salt if needed.

Remove from heat and stuff the four bell peppers with mixture. Option to add vegan cheese to top.

Prepare baking sheet by lightly spraying with oil free cooking spray.

Place bell peppers on baking sheet.

Roast bell peppers in oven for 15-20 minutes until desire texture is reach. For softer bell peppers cook for full 20 minutes

Remove from oven when finished. Serve with creamy cilantro sauce

2 cloves Minced Garlic

1 tbsp. Oregano

1/4 C Yellow onion

1/4 C Soy sauce
